Lemon and Herb Marinated Kingfish

A delicious and refreshing marinate for kingfish steaks with a little spicy zest.

Ingredients:

  • 1/4 cup of 298 Olives Medium Blend Extra Virgin Olive Oil
  • 1/4 cup freshly squeezed lemon juice 
  • 1 chilli, chopped (remove the seeds if you don't like too much heat)
  • 1 tablespoon of chopped fresh Coriander
  • 2-4 Kingfish steaks
  • Salt and pepper to season

Lightly whisk olive oil and lemon juice together till it has a slight cream consistency.  Add chopped chilli and coriander and mix.

Place kingfish steaks in a deep dish and pour over marinate, season with cracked Himalayan sea salt and pepper.  Cover and place in fridge for at least an hour.

Heat barbeque to a medium heat, place fish skin-side down on the hot plate for a minute then turn temperature down to low and close barbeque hood.  During cooking baste fish with remaining marinate to keep moist and infuse flavour.  Cook slowly until flesh starts to flake.

Cook time will depend on the thickness of fillets.  Check regularly to avoid overcooking.
